Recipe: Easy apple and spice oatmeal


Apple filling:

  • 2 tbsp, honey
  • 2 cups peeled and chopped Gala apples
  • 3/4 cup golden raisins
  • 1 tbsp, cornstarch
  • 3/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • Cooking spray or oil


  • 1 cup quick-cooking oats
  • 1/3 cup chopped walnuts or pecans
  • 1/2 teaspoon baking powder
  • Salt
  • 1 cup of milk
  • 1 large egg
  • 2 tbsp raw honey
  • 1 tsp pure vanilla extract


Apple filling:

  • In a large pot, combine 1/3 cup water, honey, apples, raisins, cornstarch, cinnamon, and nutmeg. Bring to a simmer over low heat and cook, stirring occasionally until the apples are soft.
  • Preheat the oven to 375 degrees. Lightly spray an 8 x 8 inch or 9 x 9 inch ceramic baking dish with oil. Put the apples into the bottom of the prepared baking dish.


  • In a bowl, combine the oats, half the walnuts, baking powder, and a pinch of salt. Pour over the apples.
  • In a separate bowl, whisk together the milk, egg, honey and vanilla. Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible.
  • Sprinkle the remaining walnuts over the top. Bake until the top is golden brown and the oatmeal is set, about 30 minutes. Cut into 6 rectangles and serve warm from the oven.
